I have been doing Weight Watchers (for the most part) and because I really get sick of the same shit over and over – I need to find ways to make bland food delicious. This one is definitely a keeper and I could probably eat these every week. Low fat, low carb yet moist (yea, I said it) and flavorful. Score.
Get the stuff
32 oz of ground turkey (I use half 99% fat free and half 93% for a little extra flavor, but all 99% would probably be just fine)
1 small zucchini
Half of a sweet onion
2-3 cloves of garlic
Small handful of whole wheat (or gluten free) breadcrumbs
Penzey’s Greek Seasoning (or make up your own) – about 1 1/2 Tbsp
1/4-1/2 cup of Fat Free (or not, whatever) Feta Cheese
Do the stuff
Grate up the zucchini and onion. I use my ninja and seriously pulverize those suckers
Dump the zucchini and onion slush into a fine strainer. Let the water seep out – pressing with a paper towel to soak up as much water as possible
Grab a big ass bowl
Put all the stuff in the big ass bowl
Take off your rings and mix that shit up with your hands – get in there and mush it up good until it is all combined
If you’re making balls – make the balls (about 10); if you’re making burgers – make the patties (6-8 depending on the size you like)
Now, I cook the meatballs in the Instant pot. I think it helps with the moistness. But you can certainly use any way you normally like to cook da balls. Here is the IP way:
Spray bottom of pot with non stick cooking spray
Place balls in the pot. Put about 1 cup of broth over the balls
Seal the lid, set to manual 5 minutes, and do a quick release when it is complete
Remove the balls with a slotted spoon as there will be liquid in the pot
To make burgers – just grill those bad boys
**Side note – Copper Grill Mats – I LOVE this product!! It makes grilling faster, easier, and cleaner. And no flares searing off your eyebrows. Yes. That does happen. Don’t laugh.
Not sure which brand I have but they are pretty cheap on Amazon.

Bonus Tzatziki Sauce
Place the following ingredients into a food processor, ninja, nutribullet – whatever you have that will blend that shit up:
1 english cucumber, peeled, sliced, and any seeds (won’t be much) scooped out
1 garlic clove (or more if you are expecting vampires)
1/2 tsp dill (or more if you are a dilly doo)
Approx 1 Tbsp of lemon juice (fresh is best, but whatevs)
Sea salt and pepper
Dash of Greek Seasoning (mentioned above) – optional
Cayenne or like spice. I also like Berbere from Penzey’s (duh). But just a little. Shit is HOT. This is also optional. I mean hell, any ingredient is optional. The likelihood of me showing up at your door for a recipe infraction is fairly slim. I’m pretty lazy.
After that is all blended up – add 1 1/2 cups of Greek Yogurt. I use Fage (already strained and a much less sour yogurty taste). I also use fat free when counting points, but that is up to you.
Mix it up. Enjoy. Opa!
