Greek Chicken

I love love love me some Avgolemono soup. It is very difficult to find around here, so I have had to learn to make my own. In the past couple of years, I have adapted it in various ways. I’ve added more veggies for health and tummy filling purposes. I’ve had to cut calories to make my tummy smaller (this recipe is VERY Weight Watcher friendly). And I have learned how to make it in The Pot. So, purists will want to go all Ides of March on me. But some of you may like the adaptations and you may even feel like yelling, “Fuckin’ Opa!”

Get this stuff…

2 large cooked, chopped, boneless, skinless chicken boobs (below, I will add my fantastic way of cooking juicy boobs)

3 peeled, sliced carrots

1 chopped celery stalk

1 sliced leek

3-700 cloves of garlic, chopped

1 tbsp olive oil

salt, pepper

10 cups of chicken broth

2 oz whole wheat orzo

bay leaf

cayenne pepper (how hot chuwanit)

3-4 eggs

4 tbsp of fresh (or at least a decent bottled) lemon juice

3-4 giant handfuls of baby spinach or chopped kale


Do this…

Set the IP to Low Saute and add olive oil

Throw the leek, carrots, celery into the pot and saute for a few; then add the garlic and saute a little longer

Season with salt and pepper

Add 2 cups of the broth

Lock the lid, close the valve, and set to Manual 3 minutes

After the beeeeeeeeep, do a quick release. When finished, carefully open the lid

Use an immersion blender to blend the contents, leaving some small chunks. If you don’t have an immersion blender, try a potato masher, I bet that’ll work

Add the cooked chicken, remainder of the broth, bay leaf, orzo, cayenne, more salt & pepper and mix that shit up a little

Put the lid back on, close valve, set to Manual 5 minutes

Beat the eggs in a small bowl and mix with lemon juice

Quick release when finsihed and then set to Low Saute

Slowly ladle about 1 cup of the hot broth into the egg mixture and whisk for a good minute

Slowly and carefully, add the egg mixture to the pot while whisking continuously for several minutes – don’t burn your damn self

Add the spinach/kale and let it cook for a little bit while stirring as needed

Taste it. More salt? Add it. More lemon juice? Add it. I mean, goddamn…YOU know what you like, right?

This recipe is super healthy yet filling and tasty. I counted this as 6 servings and it calculated as a mere 1.5 Freestyle Weight Watcher points…can’t really beat that.


OH yea! The chicken boobs…

Soak those breast in a salt water brine for several hours – this DOES make a difference

Spray a skillet with olive oil spray and put on medium/low flame

Season the breasts how you choose as long as it isn’t gross (my favorite is Penzey’s Fox Point with some lemon juice)

Add the breasts to the skillet, cook for a minute, and then flip

Cover with a properly sized lid and do NOT TOUCH THIS GODDAMN LID AGAIN

Set timer for 10 minutes

After 10 minutes, turn off the heat but LEAVE THE LID ON, GAWD

Set timer for another 10 minutes and walk away…do not touch that fucking lid

Okay, okay…NOW you can take off the lid…yer so impatient, gesh

Eat yer juicy chicken boobs
